Ingredients –

This recipe is designed to be flexible, so feel free to add your own favorite protein or vegetables. 

  • 1 ½ cups cooked leftover rice – (Day -old rice works best as it’s drier and fries up nicely).
  • ½ cup fermented kimchi –   chopped into a small piece (old ,sour  kimchi gives the best flavor).
  • 1-2 tablespoons kimchi juice – (The Juice from the Kimchi jar ).
  • 1-2 cloves garlic – minced
  • 1 tablespoon soy sauce.
  • 1 teaspoon sesame oil
  • 1 teaspoon cooking oil – ( vegetable and canola oil).
  • 1 Scallion – (green onion ) , Sliced for garnishing .
  • 1 egg per serving
  • Toasted sesame seeds – (For garnish ).

Step 1 : prep your pan , 🍳🔥
  • Heat a large frying pan or wok over medium high heat .
  • Add cooking oil  and your choice of protein (if used) if  you can using the bacon or pork belly, fry until crispy ,then remove from the pan , leaving the rendered fat .
Step 2 : Sautee  the Kimchi  🥢
  • Add the chopped kimchi to the hot pan. Sauté for 2-3 minutes until it becomes soft and fragrant. This step is crucial for deepening the flavor.
  •  Add the minced garlic and cook for another 30 second until fragrant.
Step 3 : Combine and Stir-fry 🥣
  • Add the leftover rice to the pan with the kimchi. Break up any clumps with your spatula.
  •  Stir-fry for 2-3 minutes, making sure the rice is well-coated with the kimchi and its juices .
Step 4 : Add Seasoning 🧂
  • pour the kimchi juice, soy sauce, and gochujang (if using) over the rice.
  •  Continue to stir-fry until the sauce is fully absorbed and the rice is a uniform red-orange color. Taste and adjust seasoning as needed.
Step 5 : Finish and Garnish 🍳
  •  Turn off the heat. Stir in the sesame oil and your cooked protein (if using).
  • In a separate small pan, quickly fry an egg to your liking (sunny-side up is classic!).
  •  Transfer the Kimchi Fried Rice to a bowl or plate. Top with the fried egg, sliced scallions, and a sprinkle of toasted sesame seeds.
